These energy balls are packed with a mix of quick energy, healthy fats and protein and are great before and after a workout. I make a batch and leave them in my fridge to grab for the week. There are many variations to these, so don’t hesitate to add in other healthy ingredients you enjoy.
Peanut butter quinoa and coconut energy balls
1/4 c puffed quinoa (directions below- easy don’t worry)
2 T chia seeds
1/3 c honey
2/3 c natural peanut butter
1/2 c oats
Directions: Puffed quinoa- Set oven to 225 degrees. Spray baking pan with coconut oil and spread quinoa on sheet. Bake for about 10 minutes to lightly crisp quinoa. Let it cool while you mix all of the other ingredients in a bowl. Add in quinoa. Take out and form into balls. I use an ice cream scooper to do this.
Great idea for kids snack too if they have after school sports practice!
